Saganaki Flaming Cheese

Kefalo (head) graviera cheese is cut from a large “Wheel” into triangles. We use a big Pizza Knife to cut the wedges. Flamed with 151 Rum to add additional taste and fun! When the chef lights it, everyone around should yell “OPA” which simply means you are having a GREAT TIME!!!
